ZACATECAS CUISINE

Among the many culinary delights that Zacatecas offers, the JEREZAN WEDDING STEW outstands as the most popular dish in the región, served mainly at local weddings.

It is Prepared with pork loin cut into small pieces, fried. An Ancho chile sauce is used, fried in butter; seasoned with pepper, cloves, cinnamon, bay leaf, orange peel, toasted white bread (to thicken it ), a splint of chocolate, sugar and salt to taste, at the end is served with slices of raw onion and is accompanied with spanish rice.

Other popular local dishes are: birria –made of ram meat, the well-known, red pozole, the enchiladas, meat marinated in red chili and gorditas stuffed with different type of stews, pork rinds among others.

The typical zacatecan drink is mezcal from Huitzila, however, Zacatecas is also an excellent wine-producing region, where there are exquisite wines: red, white and rosés.

As desserts go, they are delicious: cocadas jerezanas or Jerezan coconut candy, melcochas and charamuscas, which is closer to hard-candy Jawbreakers. Guava and Quince jellies, Jamoncillos or solid milk candies. Prickly pear honey, as well as the traditional sweets made of: Camote - sweet potato, Biznaga - Barrel Cactus, Chilacayote – squash candy and Calabaza - pumpkin candy.
