Daily we see news that shows a harsh reality. We live in a society with a very high rate of people with diseases that could be prevented or corrected with proper nutrition. We often hear the terms diet and nutrition, but do you really know the differences between these two concepts? Food is the voluntary process by which living organisms consume different types of food so as to provide the nutrients our body needs to function properly. Nutrition, however, is an involuntary process that is based on the utilization of nutrients. By saying this, is easy to deduce that there are endless ways to feed, but only one way to nourish and cover all our body’s needs. It sounds like a difficult thing to do, but is not; all we need to do, is classify the kinds of foods that are essential for a good nutrition.

Obviously, there are people with some diseases that need special nutrition depending what is the condition they are suffering, but for the majority of the people, a perfectly good nutrition is based in the fallowing:

From fifty to sixty percent of our daily diet should be based in carbohydrates, the main source of energy for our bodies. Carbohydrates have been blamed for overweight for a long time, however, not many people are aware of the fact that there are two types of carbohydrates - good and bad, and the consumption of the latter type, which leads to an expansion in the waist and many other health problems too. Good carbohydrates are, in fact, the provider of essential nutrients to our body, making a person fit and healthy.

Some of the good carbohydrates are apples, asparagus, broccoli, rice, avocados and so many others that provide the body with essential vitamins, minerals and a long list of important phytonutrients. They are rich in fiber, which provide the body with essential nutrients and energy it needs. Also, after eating foods rich in good carbs, a person tends to feel full and satisfied for long.

In the other hand, bad carbohydrates are highly refined and processed foods, so they lose most of the nutritional value and fiber. Thanks to the processing and additives, bad carbs are tantalizingly tasty. However, in producing a dramatic increase insulin levels, resulting in overworked pancreas, fat storage, diabetes, heart disease, obesity and even obesity problems. Just to mention some of the bad carb are white bread, sodas, alcohol, spaghetti and some others.

Thirty percent of our diet should consist in fat, but knowing which one is ok to chose. Fat provide energy for the body to function well against the cold. Also help transport and absorb fat-soluble vitamins (A, D, E, K) and to incorporate essential fatty acids that the body does not produce itself; but just as the carbohydrates, there are good and bad fat.

Unsaturated fat is liquid at room temperature. It is mostly in oils from plants. If you eat unsaturated fat instead of saturated fat, it may help improve your cholesterol levels. Try to eat mostly unsaturated fats. Monounsaturated fat and polyunsaturated fat are types of unsaturated fat. Monounsaturated fat: This fat is in avocado, nuts, and vegetable oils, such as canola, olive, and peanut oils. Polyunsaturated fat: This type of fat is mainly in vegetable oils such as safflower, sunflower, sesame, soybean, and corn oils. Polyunsaturated fat is also the main fat found in seafood.

Saturated fat is solid at room temperature, which is why it is also known as "solid fat." It is mostly in animal foods, such as milk, cheese, and meat. Poultry and fish have less saturated fat than red meat. Saturated fat is also in tropical oils, such as coconut oil, palm oil, and cocoa butter. You'll find tropical oils in many snacks and in nondairy foods, such as coffee creamers and whipped toppings. Foods made with butter, margarine, or shortening (cakes, cookies, and other desserts) have a lot of saturated fat. Saturated fat can raise your cholesterol. A healthy
