Objetivos principales:

• Conocer, dominar y aplicar las nuevas técnicas de la pastelería vigentes en el mundo.

• Conocer, dominar y poner en funcionamiento todos los utensilios y máquinas al servicio de la pastelería.

• Planificar, organizar y dirigir el funcionamiento del área gastronómica enfocado hacia la pastelería en restaurantes, hoteles y afines.

• Determinar el costo de las materias primas y su incidencia en el precio de los productos terminados.

• Asegurar la inocuidad de la cadena alimentaria y comprobar la calidad de las mismas.

• Perfeccionar y optimizar la utilización correcta de las materias primas buscando el mejor rendimiento de las mismas.
