The restaurant Cecinas la Y has been provided great service to its customers since 1944. The restaurant is open every day until 6 pm. Its location on the corner of Juan de Salinas and Zoilo Rodriguez.

The owner says: "My mother was widowed, and she taugh met from when I was little kid to work and sacrifice.” She helped her mother in her kitchen while she studied accounting at the Technical University of Loja, but she wanted to become independent and earn money for her needs." Cecilia found a local Cecinas la Y for sale and decided to buy it. Over time, she acquired the ability to prepare sausages and continue the tradition. She adds: "I will continue working in the restaurant until God gives me life."

Cecilia Contento says that her business is doing very well and customers have remained loyal for many years. She gives an example: "One day, a man came to eat at Cecina who seemed to be at least 80 years old. After ate his food, he told me that he had eaten here 56 years ago". This restaurant is popular among local, national and foreign people, but Cecilia says, " Lojanos are the people who most enjoy it."

Formerly, Lojanos cooked cecinas setting the jerky out to dry in the sun for three or more hours. Without adding any seasoning, the sun dried the meat, which then could be eaten with yuccas and lettuce.

These days, however the jerky is prepared from pork loin meat cut very thin and uniform, and flavored with salt and seasoning. It is roasted over charcoal grills, and then served with cassava, mote and a seasoned onion and tomato.

The menu at Cecinas la Y is very varied. The restaurant offers the following items: in roasts have Cecina and half of Cecina; in soups have chicken soup and repe; in drinks have a jar of horchata, half jar of horchata, a glass of horchata and juices; in lots have yucca and rice.

While visiting this restaurant, however we enjoyed the incomparable tastes of cecinas, as rich as it is unique. We recerved a dish containing pork’s meat, yuccas and two kinds of salad: Russian salad and encebollado. These are accompanied by salsa and chili. The employees treated us very well and made me feel as if I were at home

Jerky is so important in Loja, because it is a food that the people here have always eaten. Additionally cecina is the most important dish from southern Ecuadorian. This food carries on the tradition of our beautiful city, and is for many Lojanos it carries a lot of memories.
