OBTAINING OF ALBUMIN FROM BOVINE BLOOD SERUM

The albumin is a protein that transport different substances through the blood, is also in charge to keep the oncotic pressure of the blood. The protein has a half-life of 18 days and is found mainly in the albumen of the egg.

It has been studied the extraction of the albumin to be used as hemodynamic support in patient with severe sepsis and septic shock, this in the health area. As well it can be used in gastronomy, with the raising of studies in 3 dimensional printing with food, where they to want to create a plate of food from macromolecules, this area have a directly connection because the protein albumin is a macromolecule, in this case the albumin is in the egg that is a raw material for many recipes.

If the albumin is extracted from the egg, it is at risk to the food safety, for this reason we searched other sources for the extraction. Finally we decided to use bovine serum blood, insomuch as the plasm’s blood also have the protein, and the blood is an industrial waste, and it’s easier to have an access to that waste.

The quantity of blood in an animal is approximately 3% of its own weight when it’s alive. 

In accordance with production rates for this sub product, in Colombia, for each bovine sacrifice is obtained on average 12,5 kilograms of liquid blood. The bovine blood serum have 4.7% of albumin in wet base. Table 1 shoe the approximately composition of the blood plasm.

The price of the albumin is calculated in base of the grade of the protein. Samples analyzed in Colombia shows that the protein content in HSC is 73%, this results in a price of US$ 0.38 per kilo. 

In this text is show the technique study of the obtaining of albumin from bovine blood serum. The process follow for obtaining the blood plasm is present on the Figure 1. When blood is used, it's important to add immediately, or in a short time, anticoagulant to avoid fibrin clots formation by chemical substances in the blood.
