TEQUILA

Tequila is a distilled from the surrounding city of Tequila in Jalisco, Mexico. It was made from fermented and distilled like mescal, agave juice extracted, in particular the so-called blue agave (Agave tequilana) designation of origin in five states of Mexico: Guanajuato, Michoacán, Nayarit, Tamaulipas and of course in the entire state of Jalisco. It is perhaps the best known drink and representative of Mexico in the world.

To be called tequila, the drink must be made in Mexico and contain at least 51% of sugars from the agave, but the purest tequilas contain 100% agave. In the mixed tequilas, agave syrup is mixed with corn or sugarcane.

There are three types of tequila: the first one is called white also called "silver" is obtained just after the distillation. Bottlers pass almost immediately. Only in oak barrels for a few hours or days, so the taste does not change due to storage. In second place it is the “reposado:” is staying for a minimum of two months to less than a year in oak barrels or white oak. It is softer than white, has a faint golden natural color to a light amber, and its flavor has a hint of wood. In the other hand we have the “añejo “: is it matures for at least one year in oak barrels, color ranges from golden to dark amber deposit. Its flavor is strongly impregnated with wood. If aging has been the subject of at least three years, may be considered "extra añejo".

It is a common misconception that some tequila contains a 'worm' in the bottle. Only certain mescals, usually from the state of Oaxaca, are ever sold "con gusano" ("with worm"). The worm is actually the larval form which lives on the agave plant. Finding one in the plant during processing indicates an infestation and, correspondingly, a lower-quality product. However, this misconception continues, despite effort and marketing to represent tequila as premium liquor.

In México there are traditional ways to drink the tequila, and the most traditional way to drink tequila is straight, without lime and salt, but in only depends on the person who is drinking it. In fact, many countries who serve tequila like to serve it with the salt and lemon, because it is also a very common way to drink it. It is popular in some regions to drink fine tequila with a side of sangria.

The tequila shot is drink with salt and lemon, because in the beginning was very strong in alcohol and congeners distillation, so contact with the mouth was very aggressive. Consuming salt first increased salivation produced in the mouth, which calmed a little burning effect of the drink and sucking lemon, citrus juice relieved he felt burning in the throat. Now it is just for taste and depends in who is drinking it.
