GALLO PINTO (Costa Rica):

Ingredients

• Oil -- 2 to 3 tablespoons

• Onion, finely chopped -- 1

• Bell pepper, finely chopped -- 1

• Garlic, minced -- 2 or 3 cloves

• Cooked red (kidney) beans, drained, liquid reserved -- 2 cups

• Salt and pepper -- to taste

• Hot cooked rice -- 3 cups

Method

1. Heat the oil in a large skillet or sauté pan over medium-high flame. Add the onions, bell pepper and garlic and sauté for about 2 or 3 minutes, or until cooked through.

2. Stir in the drained beans, some of their reserved liquid, salt and pepper. Bring to a boil, then reduce heat to medium-low and continue to simmer until heated through.

3. Add the rice and stir into the beans and heat through. Adjust seasoning and add a little more bean liquid if necessary. Serve hot.

PUPUSAS:

Ingredients:

5 cups masa harina flour

4 cups water, approximately

16 -24 ounces canned refried beans

3 cups soft white cheese

light vegetable oil or light olive oil

Directions:

1) In a large mixing bowl, gradually stir water into masa harina until dough forms a ball that can be handled.

2) Into another bowl, empty the refried beans. Place the grated cheese into a separate bowl.

3) Divide dough into about 25 pieces. Roll each into a ball and flatten between the palms of your hands to about 1/2-inch thick. Put a spoonful of beans and a small handful of cheese into the center of each pupusa. Flatten again with the filling inside.

4) Heat a heavy, wide-bottomed or flat skillet until hot. Brush with oil and cook pupusas on each side 4-5 minutes until a pale golden-brown. The outside should be firm.

SNAILS SOUP (HONDURAS)

Ingredients:

6 cups chicken broth

3/4 pound yucca, peeled and diced (about 2 cups)

2 carrots, chopped

1 medium onion, chopped

1 cans (14.5 oz.) Tomatoes (tomatoes) in low-sodium diced

1 tablespoon olive or vegetable oil

3 cloves garlic, finely chopped

1 serrano or other chili, finely chopped (more or less to taste)

1/2 teaspoon finely chopped fresh ginger

1 pound conch meat, cut into bits and softened shock, or scallops, clams or any kind of seafood fresh meat

1 can (12 fl. Oz.) NESTLÉ CARNATION Evaporated Milk Evaporated Milk

1 can (13.5 oz.) Coconut milk

1 teaspoon salt

1/2 teaspoon ground black pepper

1/2 teaspoon ground cumin

1/4 cup chopped fresh cilantro

PLACE chicken, cassava and carrots in a large saucepan over high heat; let them boil. Reduce heat until a gentle boil. Add onions and tomatoes; Put the lid. Simmer, stirring occasionally, for about 10 minutes.

HEAT oil in a large skillet over medium heat. Add the garlic, chilli and ginger; cook for 1 minute or until it becomes translucent garlic. Make snail meat; cook it, stirring occasionally, for 2 minutes. Add the mixture to the pan spiral. Stir in evaporated milk, coconut milk, salt, black pepper and cumin. Cook the soup, stirring occasionally, until boiling. Remove from heat. Stir in cilantro and serve.

Ingredients:

• 2 lb of fresh Corvina (Dorado, Grouper or Tilapia also works)

• 1 large red onion, finely diced

• 1 large green pepper, finely diced

• 1 cup of freshly squeezed lime juice

• 2 chopped cilantro leafs

• Salt

• Pepper
